Sunomono literally means “Vinegared Thing” at least according to the google machine? Whatever the literal translation really is or isn’t, here is my recipe for a Vinegared Thing. Recipe 1 English cucumber, sliced thin 2 tablespoons Kosher Salt 1/4 cup rice vinegar, not sweet 1 tablespoon sugar 1 tablespoon togarashi blend (I used @spiceology ) 1 tablespoon ginger, grated 1 each lime zested and juiced 1 teaspoon toasted sesame seeds Slice and salt the cucumbers. Let sit for at least 30 minutes then drain and rinse under cold water… rinse well… like your life depended on it. Toss in a bowl with remaining ingredients and mix. Eat right away or let sit in your fridge for up to a week.
