Holiday Eggnog Loaf Cake Recipe - Ingredients: 2 large eggs 1/2 cup sugar 1/2 cup butter, melted and cooled 1 tbsp dark rum 1 tsp vanilla extract 1 cup eggnog 2 1/4 cups all-purpose flour 2 tsp baking powder 1/2 tsp salt 1/4 tsp cinnamon 1/4 tsp nutmeg Glaze- 1 cup powdered sugar 2 tbsp eggnog Pinch nutmeg Instructions: Preheat oven to 350°F Line 9x5 loaf pan with parchment paper and set aside Mix together the eggs, sugar, melted butter, rum, vanilla extract and eggnog Add the flour, baking powder, salt, cinnamon and nutmeg and stir to combine Pour batter into prepared loaf pan and bake for 45-50 minutes, until toothpick inserted in center comes out clean Cool in pan for 10 minutes then move to wire rack and cool completely Glaze- Stir together powdered sugar, eggnog and nutmeg Drizzle over cake and let set Enjoy!
