Ingredients: 2 cups flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2 tsp cinnamon 1 tsp nutmeg 3/4 cup brown sugar 1/2 cup milk of choice 2 flax eggs 1/2 cup oil of choice 2 tsp vanilla extract 1 TB apple cider vinegar 2 cups shredded carrots 1/2 cup chopped walnuts Instructions: Preheat oven to 350° F Prepare loaf pan with parchment paper Whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg Add brown sugar, milk, flax eggs, oil, vanilla and apple cider vinegar, mix to combine Fold in shredded carrots and walnuts Pour batter into loaf pan, spread evenly Bake 55-60 minutes, until toothpick comes out clean Cool in pan Serve with a scoop of icecream Enjoy!
