Since I'm baking with my son I thought I would share an age old trick I had to do to figure out if these eggs with a July 26 best by date would work for todays brownies. The science behind it is: Fresh eggs have a small air cell, so they will sink to the bottom of a glass of water and lay flat. Slightly older eggs have a larger air cell, which may cause them to stand upright on the bottom of the glass. Old eggs have an even larger air cell, causing them to float.
