Chicken Marsala Ingredients 1.5-2 lbs chicken breast 1 shallot 16oz mushrooms 2 sliced garlic cloves 1/2 C Marsala wine 1 C chicken broth 1-2 Fresh thyme sprigs 4 oz mascarpone cheese 1 tbsp Dijon mustard 1 cup flour with seasonings (Seasonings salt, pepper, garlic powder, onion powder, Italian seasoning) Directions: Cut chicken into thinner slices and pound with a meat tenderizer. Season, dip in flour, then fry on both sides in a pan until it has a golden sear. Remove from pan. Add mushrooms and cook on medium heat about 5-7 minutes. Add diced shallot and sliced garlic. Cook a few more minutes. Add wine, cook 2-4 minutes until slightly reduced. Then add broth, mascarpone, thyme, Dijon mustard, stir. Add chicken back to the pan. Simmer on medium low heat about ten minutes. Top with parsley and eat with pasta or mashed potatoes.
