INGREDIENTS: 1 tbsp extra virgin olive oil 1/2 cup yellow onion, finely diced 4 garlic cloves, minced 2 tbsp grated ginger 2 tbsp salted butter 1 cup chicken stock 6 oz tomato paste 1 tsp ground cinnamon 1 1/2 tsp sea salt 2 tsp cumin 1 tsp turmeric 2 1/2 lbs chicken breasts, cut into cubes 1 1/2 tbsp fresh lemon juice 1 cup heavy cream 2 cups white rice DIRECTIONS: 1.) In a large pan heat olive oil over medium heat. Add in onion, garlic, and ginger. Cook 2 to 3 minutes, stirring often. 2.) Cook rice according to package. Set aside once done. 3.) Add in butter, chicken stock, tomato paste, cinnamon, salt, cumin, and turmeric. Stir until combined. Bring to a simmer, then stir in the chicken until coated. 4.) Stir in the lemon juice and heavy cream until combined. 5.) Serve stop your rice and enjoy!
