INGREDIENTS: 2 lbs chicken breasts, cubed 1 (1 lb) box noodles 1 medium butternut squash 1 large onion 1 tsp Italian seasoning 1 tsp garlic powder 1 tsp salt 1/2 tsp black pepper 1 cup chicken broth Olive oil for cooking CHEEE SAUCE: 4 tbsp butter 4 oz cream cheese 1 cup heavy cream 1 cup cheddar cheese 8 oz fresh mozzarella 2 tsp Dijon mustard DIRECTIONS: 1.) Peel, slide, cube butternut squash. Roughly dice onion. Cube chicken breast. 2.) Season chicken breast with Italian seasoning, garlic powder, salt/pepper. Add to pan and cook until done. Set aside. 3.) Sauté onions until softened. Remove and pour into blender. 4.) Sauté butternut squash, then add chicken broth, cover with lid, and cook until tender. Pour into blender. 5.) Melt butter, cream cheese, heavy cream. Once combined, add cheeses and mustard. Stir. Add to blender. Combine noodles, chicken, and sauce. Serve. Enjoy!
