ArashFood & Drink #ClipsHIGH PROTEIN 🍄SOUP. 4 servings, 165cals and 20g protein each. 1️⃣ Preheat oven to 400°F. 2️⃣ Roughly chop 1lb mixed mushrooms, 1 shallot, and add to a baking tray. 3️⃣ Cut the top off a whole garlic bulb, drizzle with 1 tbsp olive oil, and wrap it in foil. Place it on the baking tray with the mushrooms and onion. 4️⃣ Drizzle 1 tsp olive oil over the mushrooms and shallot. Add 1 tbsp dried thyme, salt, and cracked pepper. Roast for 38-45 mins. 5️⃣ Once roasted, squeeze the garlic cloves from the bulb and add to a blender with the mushrooms and onion. 6️⃣ Pour in 17 oz bone broth, 1/4 cup water, 3/4 cup cottage cheese (around 3.5 servings) for creaminess. 7️⃣ Blend until smooth and creamy. Adjust seasoning to taste. Salt is key! Serve and enjoy!

For regular rice, cook 2 cups and mix with 2 tbsp zaatar or Italian seasoning. In a bowl, mix the cooked rice with 1/4 cup avocado oil. Spread rice on a parchment-lined baking sheet. Bake at 425°F for 25 minutes, stir, then bake for another 5-10 minutes. Let cool. For the salad, process 1/3 cauliflower into “snowflakes.” Add 5 sliced Persian cucumbers, chopped parsley, mint, 1/2 diced onion, and 1/2 cup halved tomatoes. Top with 2 oz feta, zest of 1 lemon, 3-4 tbsp olive oil, juice of 1 lemon, salt, pepper, and 1 tsp Aleppo pepper. Toss with cooled crispy rice and enjoy!

Use 1 lb cooked, shredded chicken (like rotisserie). Shred or dice it. 2. Finely chop 1/2 red onion, soak in water for 10 minutes, drain, and add to a bowl. 3. Add chopped cilantro and 1 diced avocado. 4. For the dressing, blend 5 tbsp cottage cheese, 3 tbsp mayo, 1 tbsp onion powder, juice of 3 limes, cilantro, salt, and pepper. Adjust seasoning. 5. Roll it up in cucumbers: Slice a large cucumber thinly and pat dry. Spread 2 tbsp cream cheese, add 4 oz chicken mix, and top with onion and avocado. Roll tightly and slice. Top with everything bagel seasoning and chipotle hot sauce. Enjoy!

Since I don’t have a pit, I adapted the recipe for my home kitchen! **Ingredients:** - 3 lbs lamb shoulder - 1 small onion - 4-5 garlic cloves - 1-inch ginger - 4 tbsp tamarind paste - Juice of 1/2 lemon - 3/4 cup bone broth - Spices: Aleppo pepper, paprika, coriander, turmeric, cumin, cinnamon, cloves, cardamom, salt, and pepper **Instructions:** 1. Marinate lamb with spice paste (processed onion, ginger, garlic, spices, tamarind, lemon juice) for 2 hours or overnight. 2. Preheat oven to 290°F. To make the filling, mix 1 lb ground lamb (or beef) with a couple pinches of salt and pepper, 1 tbsp smoked paprika, 1 tbsp sumac, 1/2 tsp coriander, 1/2 tsp allspice, 3 tbsp fresh parsley, 2 minced garlic cloves, and 1/2 grated onion. Let it sit for a few minutes. Stuff your favorite pita, then cook in a skillet with 1-2 tbsp oil for 3-3.5 minutes per side until crispy. If thicker, finish in the oven at 400°F for 8-10 minutes. For the sauce, mix 1/2 cup Greek yogurt, 2 tbsp mayo, 1 minced garlic clove, 2 tbsp parsley, juice of 1/2 lemon, salt, and pepper. Garnish your pitas and enjoy!
