As someone who does cooking for a living, I'm very embarrassed to say that all my knives are actually pretty dull. This Japanese knife is 7 inch, so a little bit smaller than a regular chef's knife, but lighter for more precise cuts. My only requirement for this knife was that it would cut paper in one try as smoothly as possible, which in fact it can because I tried.
