β¨1 lb ground beef
β¨1 onion (diced)
β¨3 cloves garlic (minced)
β¨1 packet taco seasoning
β¨1 can rotel
β¨Green chilies (undrained)
β¨1 can black beans (drained & rinsed)
β¨1 can corn (drained)
β¨28 oz package of frozen potatoes oβbrien with peppers & onions
β¨4 cups chicken broth
β¨4 cups milk
β¨8 oz package cream cheese
β¨Salt & Pepper to taste
Toppings: cilantro, shredded cheese, sour cream & jalapeno if you like a kick!
Directions:
1. In a LARGE pot brown ground beef with onion until no longer pink. Add garlic and cook for 2 minutes. Drain off excess grease.
2. Add taco seasoning, rotel, black beans, corn, potatoes, chicken broth and milk.
3. Bring to a boil then reduce to a simmer, covered for 20 minutes.
4. Stir in cream cheese and salt/pepper to taste.
