✨Bacon pieces
✨1 med onion (chopped)
✨4 large Russet potatoes (diced) or one bag frozen chopped potatoes
✨1/4 cup flour
✨4 cups whole milk
✨1 cup chicken broth
✨1 clove garlic minced
✨1 1/2 cup cheddar cheese (more for topping)
✨Chopped green onion (topping)
✨3/4 cup sour cream & (more for topping)
✨Salt & pepper to taste
1. In a large pot over stove top, add onion and sauté.
2. Stir in flour and cook for about a minute.
3. Whisk milk in slowly until flour has dissolved.
4. Add chicken broth, garlic, and potatoes. Increase heat to high. When soup is almost boiling, reduce heat and cover pot with lid slightly open. Let soup simmer for 20 minutes or potatoes are nice and tender.
5. Stir in the sour cream, cheddar and bacon, season with salt/pepper as needed.
6. Top each bowl with green onion, cheddar and bacon.ClipsFood & Drink
